Retsept 3 leiva jaoks:

Vajalikud koostisosad:

  • Dary Natury mahe rukkileiva juuretis – 35 g,
  • Dary Natury mahe rukkijahu tüüp 580 – 2 kg,
  • sool 4,5 teelusikatäit.

Haputaigna valmistamine:

1. Juuretise käivitamine: vala juuretise kotikese sisu klaaspurki ja lisa 35 ml sooja vett (40 °C). Segage puulusikaga, katke marli või paberrätikuga ja jätke seisma, kuni koostisosad moodustavad sileda, ühtlase massi (umbes 60 minutit).

Sellest kogusest saab valmistada umbes 3 leiba.

Leiva valmistamine:

1. Vala jahu (1,8 kg) kaussi ja sega soolaga. Lisa aktiivne juureaine, vala sisse 1,5 liitrit leiget vett ja sõtku tainast lühidalt, kuni see on ühtlane.

2. Kaunista leivavorm küpsetuspaberiga ja aseta tainas sinna sisse. Niisuta käsi veega ja silu pealispind siledaks. Kata riidega ja lase 4–5 tundi soojas, tuuletõmbuseta kohas kerkida.

3. Kuumuta ahi eelnevalt 210 kraadini.

Külmkapis hoitud juuretise toitmiseks võta see külmkapist välja umbes 2–3 tunniks, seejärel toida, sega läbi ja jäta sooja kohta 10–12 tunniks seisma.

NO ADDED YEAST

Ingredients: freeze-dried rye sourdough starter (rye flour, water)*.
*product of organic farming

__________

Recipe for 3 loaves of bread:

Ingredients needed:

  • Dary Natury organic rye sourdough bread – 35 g,
  • organic rye flour Dary Natury type 580 – 2 kg,
  • salt 4.5 teaspoons.

Preparing the sourdough starter:

1. Starting the starter: Pour the contents of the starter sachet into a glass jar and add 35 ml of warm water (40°C). Stir with a wooden spoon, cover with cheesecloth or a paper towel, and set aside until the ingredients combine into a smooth, uniform mass (approx. 60 minutes).

2. Feeding the starter: Pour 200g of flour into a 1-liter glass jar, add 200ml of warm water (40°C), and then add the awakened starter. Mix all ingredients, cover with cheesecloth or a paper towel, and set aside in a warm place for 12-20 hours (depending on the type of flour and ambient temperature).

Once it increases in volume and bubbles appear, the starter is ready to use. This portion is intended to make approximately 3 loaves of bread.

Preparing the bread:

1. Pour flour (1.8 kg) into a bowl, mix with salt. Add active leaven, pour in 1.5 liters of lukewarm water, and briefly knead the dough until combined.

2. Line a loaf pan with baking paper and place the dough inside. Moisten your hand with water and smooth the top. Cover with a cloth and let rise for 4-5 hours in a warm, draft-free place.

3. Preheat the oven to 210 degrees Celsius. Sprinkle the top of the risen dough with water and place the pan in the oven. Bake for about 60 minutes.

If you’re using a smaller amount of starter and plan to bake again the next day, store the starter in a warm place and feed it every 24 hours. Feed the starter similarly by adding 35g of flour and 35g of lukewarm water to the jar, then combine the ingredients with a wooden spoon.
If you plan to bake bread occasionally, store your starter in the refrigerator, remembering to only cover it with a lid, not the jar. Starter stored this way doesn’t require daily feeding; once a week is sufficient. To feed starter stored in the refrigerator, remove it from the refrigerator for about 2-3 hours, then feed it, stir, and set it aside in a warm place for 10-12 hours.
